This Blueberry Dessert is so yummy and beautiful you will have a hard time eating just one piece. It’s not a cheesecake, but it is in the same family and much easier to make. It only takes a few ingredients and the only cooking that needs to be done is the crust.
If you are looking for something easy and different to make for a dessert, jackpot! You’ve come to the right place.
The blueberry topping is super easy. You’ll need fresh blueberries and if they are frozen you will need to let them thaw.
I put this in the refrigerator to let it cool and thicken while I make the rest of the dessert.
The first layer that goes in the bottom of the 8 x 8 baking dish is this delicious graham cracker crust.
Crushed graham crackers
The next layer of this yummy dessert is a cream cheese mixture. Yes, please!
The last layer before the blueberry topping is whipped topping.
And that, my friends, is it! Add the blueberry topping, pop it in the fridge and you have a wonderful dessert that looks like it took you all day.
This yummy dessert is so easy to make and only takes a few ingredients. It resembles a cheesecake, but is much easier to make.
- 2 cups fresh blueberries
- 1/2 cup sugar
- 1 1/2 tablespoons flour
- 1/2 teaspoon lemon juice
- 1/2 cup water
- 1 cup crushed graham crackers
- 1 stick butter, melted
- 1 cup powdered sugar
- 1 – 8 ounce cream cheese, softened
- 1 – 8 ounce whipped topping
Preheat oven to 250 degrees
Place the blueberries, sugar, flour, lemon juice, and water in a medium sauce pan and stir well. Heat to a boil. Reduce heat to medium high and cook for 1 minute. Take off burner and let completely cool. (Sauce will thicken as it cools.)
In a medium bowl stir crushed graham crackers and butter until all the graham crackers are covered in butter. Place in an 8 x 8 greased baking dish, spread it out by using the back of a spoon until it is smooth and the bottom is covered. Put the crust in a 250 degree oven for 10 minutes. Set to the side and let completely cool.
In a mixing bowl, mix on medium speed cream cheese and powdered sugar until creamy. Start out slow or you will have powdered sugar all over you and your kitchen.
Layer your cream cheese mixture on top of the cooled graham cracker crust. Then layer the whipped topping on top of the cream cheese mixture.
Add the cooled blueberry topping and place in the fridge for at least 2 hours before serving.
