You will be amazed at these easy, fluffy, homemade pancakes. They are so delicious you and your family will want to eat them every weekend. I started making these when my kiddos were young and they begged me to make them all the time. In fact, they still ask me to make them and now the grandkids do too.
There are just a few ingredients:
- self-rising flour
- an egg
That’s it! All you need to add is butter, syrup, fruit, or anything you like to eat with pancakes.
The easiest and fluffiest, homemade, pancake recipe you will ever make.
- 2 cups self-rising flour
- 1 large egg, slightly beaten
- 2 tablespoons sugar
- 1 1/2 cups milk
Place a medium size non-stick skillet or griddle on medium heat. Allow to heat while creating the pancake batter.
In a medium bowl, stir flour, egg, sugar and milk until thoroughly mixed. The batter should be thick like a cake batter. This is what makes the pancakes light and fluffy. If you want thinner pancakes add more milk.
Using a ladle, scoop out one ladle at time into the hot skillet. The pancake should cook for about one minute per side. (You may have to adjust times and heat.) You will know it is time to flip it over when there are bubbles around the edge of the pancake.
If the skillet seems to hot or cooks the pancake too fast, slightly turn down the heat.
If the batter becomes thicker than cake batter while cooking, add a small amount of milk and mix until it is back to the desired consistency.
Busy Parent Tip: These are great to make ahead of time and freeze. Just place in a Ziplock bag or seal in a Foodsaver bag and place in the freezer. When you are ready to use, just take one out, wrap in a damp paper towel, and microwave for about 1 minute (times vary for microwaves) and viola, you have a perfect pancake anytime you are ready!
