Healthy Crockpot Chicken and Veggies

My Crockpot is my BFF forever! We just see eye-to-eye and understand each other. We are a great team and work so well together. I could not and will not ever live without my Crockpot. I use it on those days when I know I am going to have meetings after school and won’t be home until late. Sometimes, I use it on the weekends if we’re going to be out all day, and I know won’t want to cook when we get home. That’s what makes this Healthy Crockpot Chicken and Veggies recipe so great! You can have you’re whole meal done when you get home. It just doesn’t get any better than that!
The awesome part is if you have any leftover chicken you can use it in something else, like chicken salad, or you could add it to a garden salad for added protein and flavor. I love it when I can use one recipe for more than one meal, don’t you? It makes my life more simple and it cuts down on the grocery bill, and who doesn’t love that?

It has a lid that seals so when you take it somewhere for a family reunion or potluck, you don’t have to worry about it spilling all over you car. I’ve transported soups, beans, and lots of other things without spilling a drop, and I didn’t have to drive 5 miles an hour either.
It also has a couple of different setting like if you want to cook it for 4, 6, 8, or 10 hours, and then it has this handy, dandy little warmer that kicks on after it’s finished cooking for the amount of time that you set. So, it stays warm until you’re ready to eat it and it stops cooking! I know! It’s awesome!
A Healthy Meal
This meal is healthy because it it only has chicken, potatoes, green beans and some seasonings. Nothing unhealthy about that! That’s a win-win all the way around. Feed your family a great meal they will love, and you don’t have to feel guilty about what’s in it.
What Do I Use
When I make this meal, I use a whole chicken, but you could use just the parts you love, such as the chicken breast or thighs. I use the whole chicken because my husband loves the dark meat, and I eat the white meat. I also hope for leftovers, so I can use it in something else. The meat literally falls right off the bone, so be sure not to over cook it.
This recipe also calls for red potatoes. I just love red potatoes, because they have a great flavor, and they are easy to use because of their size. I leave the peeling on, because that is where all the vitamins are, but you can peel them if that’s more your style.
The last ingredient I use are fresh green beans. They are so yummy when they’re fresh! You can get them from your grocery store, but I love to get fresh veggies from the local farmer’s market. It helps them out, and I know exactly where they came from and what they put on them as far as pesticides and such.
Be sure to wash them and break the ends off. Then break them in half for the perfect size. I remember as a kid spending time with my grandmother and mom breaking beans in the hot summer. It’s sad that people don’t do that much anymore.
One tip I have using a Crockpot and making your life easier, is to get everything ready in your Crockpot the night before. Put everything in it and then place it in the refrigerator. Then you don’t have to get up early the next day to get everything ready.
You can sleep a few extra minutes and before you run out the door, get the Crockpot out of the fridge and turn it on. It’s that easy! It wont hurt anything because it heats up slowly. Healthy Crockpot Chicken and Veggies
Healthy Crockpot Chicken and Veggies recipe that has an herb flavored, roasted, chicken with fresh green beans and red potatoes.

- 1 whole chicken 2 -3 pounds
- 1/3 cup chicken broth
- 1 Tablespoon olive oil
- small red potatoes, about 2 pounds, washed and cut into 2 inch pieces or left whole if small enough, leave peeling on
- 1 pound fresh green beans, washed and broken
- 1/2 teaspoon garlic salt
- 1/2 teaspoon Italian Seasonings
- 1/4 teaspoon black pepper
- 1 teaspoon minced garlic, or 2 cloves
- 1/2 teaspoon salt
Clean the chicken and be sure to take out the giblets from the body cavity, then pat dry. Add chicken to the Crockpot and drizzle olive oil over the chicken.
Add the garlic and sprinkle the chicken with garlic salt, Italian Seasonings, and 1/8 teaspoon of black pepper.
Pour chicken broth around the sides being sure not to wash the seasoning off the chicken.
In a separate bowl, add potatoes and toss with 1/2 teaspoon salt and 1/8 teaspoon pepper, then add to Crockpot. Be sure they settle along the sides so you will have room for the green beans.
Add green beans on top of potatoes and add a pinch of salt and pepper to them.
Cook on high 4 hours, or on low for 7-8 hours.
You can use any kind of potatoes, but red are the best.
Leave the peeling on the potatoes for added flavor and vitamins.
You can use chicken breasts or thighs instead of a whole chicken.
