Wild Rice and Mushrooms is one of those dishes that is versatile and goes with any main course. This recipe is easy to make and oh so, delicious. It seems so simple, yet, it has a wonderful flavor, and it is healthy too.
Seriously, I could eat this until I burst! You will want to make this dish, and your family is going to ask for more.
You will want to broil your mushrooms first. Start by washing and slicing them.
Next, you will want to prepare the long-grain wild rice and add onions. You will cook it in beef broth instead of water to give it a yummy flavor.
Now, you add the mushrooms and you have a yummy side dish of Wild Rice and Mushrooms. Just try not to eat it all!
Wild Rice and Mushrooms with yummy long-grain wild rice and broiled mushrooms. This side is delicious and healthy, and it goes with any main dish.
- 1 package of button mushrooms
- 1/2 teaspoon salt
- 1/2 teaspoon fresh ground pepper
- 1/2 teaspoon olive oil
- 1 tablespoon cooking wine
- cooking spray
- 1 6 ounce package Uncle Ben’s Long-Grain and Wild Rice
- 1 10 1/2 ounce can beef broth
- 1/4 cup finely chopped onion
- 1 tablespoon olive oil
Preheat broiler to high and spray a baking sheet with cooking spray. Then wash and slice button mushrooms. In a medium bowl, mix cooking wine, olive oil, salt, and pepper. Add mushrooms and toss until evenly coated.
Arrange mushrooms in a single layer on prepared pan and broil about 4 1/2 minutes. Stir and flip mushrooms and broil about 4 1/2 more minutes or until the mushrooms are cooked to your liking.
Take out of oven set aside until the rice is done.
Add Uncle Ben’s Long-Grain and Wild Rice and season packet to a sauce pan. Mix beef broth and water to make 2 1/4 cups and add to rice. Next, add chopped onion, and oil, Bring to a boil. Reduce heat; cover and simmer for 20 minutes or until the liquid is gone.
Now add the mushrooms and stir. Serve warm.
