Wild Rice and Mushrooms

You will want to broil your mushrooms first. Start by washing and slicing them.
Next, you will want to prepare the long-grain wild rice and add onions. You will cook it in beef broth instead of water to give it a yummy flavor.

Wild Rice and Mushrooms
Wild Rice and Mushrooms with yummy long-grain wild rice and broiled mushrooms. This side is delicious and healthy, and it goes with any main dish.

- 1 package of button mushrooms
- 1/2 teaspoon salt
- 1/2 teaspoon fresh ground pepper
- 1/2 teaspoon olive oil
- 1 tablespoon cooking wine
- cooking spray
- 1 6 ounce package Uncle Ben’s Long-Grain and Wild Rice
- 1 10 1/2 ounce can beef broth
- 1/4 cup finely chopped onion
- 1 tablespoon olive oil
Preheat broiler to high and spray a baking sheet with cooking spray. Then wash and slice button mushrooms. In a medium bowl, mix cooking wine, olive oil, salt, and pepper. Add mushrooms and toss until evenly coated.
Arrange mushrooms in a single layer on prepared pan and broil about 4 1/2 minutes. Stir and flip mushrooms and broil about 4 1/2 more minutes or until the mushrooms are cooked to your liking.
Take out of oven set aside until the rice is done.
Add Uncle Ben’s Long-Grain and Wild Rice and season packet to a sauce pan. Mix beef broth and water to make 2 1/4 cups and add to rice. Next, add chopped onion, and oil, Bring to a boil. Reduce heat; cover and simmer for 20 minutes or until the liquid is gone.
Now add the mushrooms and stir. Serve warm.
